GINGER, LEMONGRASS AND MINT ICED TEA
Cool down this summer with a refreshing burst of Ginger, Lemongrass and Mint Iced Tea!
Prep time 10 minutes plus chilling
Cook time 5 minutes
1 lemongrass stalk
4cm (30g) fresh ginger, sliced
1/4 cup (90g) honey
4 cups (1 Litre) water
3 Tbsp (15g) Zest Tea
A handful of mint leaves
Soda water to taste
Trim the bottom of the lemongrass and carefully peel 4 outer layers, set aside to use later. Finely chop the remaining lemongrass.
Bring the lemongrass, ginger, honey, water and tea to a simmer in a small saucepan over medium-high heat. Remove from the heat, cool slightly before refrigerating to chill completely.
To serve, strain the tea through a fine sieve and divide among four tall glasses. Add ice and mint leaves then top with soda to taste. Serve with reserved lemongrass for a swizzle stick.
